Pełen wypas - hamburgery wegańskie :)

Dzisiaj chciałam zaprezentować Wam przepis, który już za pierwszym razem podbił moje serce i żołądek :) Będę go jeszcze dopracowywać i kiedy dojdę do perfekcji to na pewno dam Wam znać, ale nawet w tej wersji efekt jest tak przepyszny, że bardzo chciałam się nim z Wami podzielić. Próbowałam znaleźć w sieci przepis na wegańską bułkę do hamburgera, ale nic ciekawego nie wyszukałam, więc zastosowałam  starą metodą "jakoś to będzie" i sypnęłam składniki na czuja. Z kolei bułkę tartą zrobiłam mieląc wysuszoną bułeczkę domowej roboty w blenderze. Efekt okazał się zdecydowanie pozytywny :)
Składniki na 4 hamburgery

Ciasto
  • 2 kubki mąki pełnoziarnistej pszennej
  • płaska łyżeczka sody oczyszczonej
  • 6-7 łyżek oleju
  • trochę wody (ilość zależy od mąki)
  • szczypta soli
Burger
  • 1 puszka czerwonej fasoli
  • 1 średnia cebula
  • 1 średnia marchewka
  • 2 ząbki czosnku
  • 2 garście słonecznika
  • 1/3 szklanki zmielonych płatków owsianych
  • 1/3 szklanki zmielonego siemienia lnianego
  • 1/3 szklanki bułki tartej
  • sól, pieprz, curry, chilli - do smaku
I jeszcze...
  • 8 liści sałaty
  • 1 pomidor
  • musztarda
  • kilkanaście listków bazylii

Sposób wykonania 

Ciasto

  1. W misce wymieszaj mąkę, sodę i sól. Dodaj olej. Dolewaj po trochę wody, za każdym razem zagniatając ciasto i sprawdzając konsystencję. Ilość wody w bardzo dużym stopniu zależy od rodzaju mąki, trzeba więc za każdym razem próbować. Pamiętaj, że mąka pełnoziarnista chłonie wodę wolniej niż mąka biała, jeżeli więc ciasto wyjdzie lekko lepkie nie dosypuj od razu mąki, tylko chwilę je powyrabiaj.
  2. Podziel ciasto na 4 części i uformuj płaskie bułeczki o grubości ok. 1 cm.
  3. Piecz w temperaturze 180st. C około 20 minut. Bułeczki są dobre, kiedy drewniany patyczek wbity w ciasto wychodzi suchy.
Burgery
  1.  Wsyp siemię do filiżanki i zalej gorącą wodą tak, żeby otrzymać konsystencję gęstego kisielu. Odstaw do ostygnięcia i zgęstnienia.
  2. Do blendera wrzuć odsączoną fasolę oraz obrane i pokrojone na duże kawałki marchewkę, cebulę i czosnek. Miksuj aż składniki dobrze się połącza, ale masa nie będzie zupełnie gładka.
  3.  Dosyp zmielone płatki, słonecznik oraz bułkę tartą. Dopraw pieprzem, solą, chilli i curry. Z mojego doświadczenia wynika, że przypraw potrzeba tu raczej więcej niż mniej, bo płatki i bułka mocno je chłoną. Ponownie zmiksuj, aż składniki dobrze się połączą. Może się okazać, że trzeba na chwilę zatrzymać blender i zebrać masę ze ścianek.

  4. Dodaj siemię lniane i całość porządnie wymieszaj.
  5. Z otrzymanej masy ręką formuj kotleciki o grubości ok. 1 cm i średnicy zbliżonej do bułeczek. Układaj na natłuszczonej blaszce. Można spróbować je panierować np. w ziarnach słonecznika czy siemienia, ale bez tego też się trzymają. Piec ok. 25 minut w 180st. C. W trakcie pieczenia można je delikatnie obrócić na drugą stronę.
Wielki finał :)
  • Bułeczkę rozkrój na pół i obydwie strony posmaruj musztardą. 
  • Na jednej połówce ułóż listek sałaty...
  •  ...burgera...

  • ...plasterek pomidora i bazylię, jeszcze jeden listek sałaty i drugą połówkę bułki. GOTOWE!

Vegan hamburgers

Today I wanted to present you a recipe that has captured my heart and stomach since the first time :) I still tweak it and when I get to perfect I will let you know, but even in this version, the effect is so delicious that I wanted to share it with you. I tried to find on the net  recipe for a vegan bread burger, but I couldn't finding anything interesting, so I applied the old method of "Will see.." and add the ingredients uing my intuition. The bread crumbs I did grinding dried homemade bread in a blender. The result was a highly positive :)

Ingredients for 4 burgers

Cake

  • 2 cups whole-wheat flour, wheat
  • level teaspoon of baking soda
  • 6-7 tablespoons of oil
  • some water (the amount depends on flour)
  • pinch of salt
Burger
  • 1 can of red beans
  • 1 medium onion
  • 1 medium carrot
  • 2 cloves of garlic
  • 2 handfuls of sunflower
  • 1/3 cup ground oatmeal
  • 1/3 cup ground flaxseed
  • 1/3 cup bread crumbs
  • salt, pepper, curry, chilli - to taste
And also ...
  • 8 lettuce leaves
  • 1 tomato
  • mustard
  • a few basil leaves
How to make
Cake

  1. In a bowl, mix the flour, baking soda and salt. Add the oil. Top up the water a little bit every time crimping dough and checking consistency. The amount of water extent on the type of flour, so you must therefore try every time. Remember that whole-wheat flour absorbs water slower than white flour, so if the dough will be a little bit sticky don't add immediately flour, but knead it just a moment.
  2. Divide the dough into 4 pieces and shape into flat cakes with a thickness of about 1 cm.
  3. Bake at 180 degree for about 20 minutes. Bagels are good, when a wooden stick stuck into the dough comes out dry.
Burgers
  1. Put flax seed to the cup and pour hot water so as to obtain consistency of a thick jelly. Leave to cool and thickens.
  2. To the blender put drained beans and peeled and cut into large chunks of carrot, onion and garlic. Mix the ingredients until well blended, but the mass will not be completely smooth.
  3. Sprinkle ground flakes, sunflower seeds and bread crumbs. Season with salt, pepper, chilli and curry. From my experience, the spices you need is rather more than less, because flakes and bread strongly absorb them. Again, blend until the ingredients will be well blended. You may find that you need to stop for a moment to collect the mass of the blenders walls.
  4. Add flaxseed and mix everything properly.
  5. Form prepared mass by hand to chops, which thickness will be about 1 cm and a diameter will be similar to the rolls. Arrange on a greased baking tray. You can try coat  them with such as sunflower seeds or flax, but without they are also good. Bake for about 25 minutes in the 180 degrees. During the baking you can turn them gently to the other side.

The grande finale :)

  1. Cut the bagels into the halfs and smear bothe sides mustard.
  2. On the one half place the lettuce leaf, the burger, slice of the tomatoe, some basil leaves and second lettuce leaf.
  3. Cover by second half of the bageles. Bon appetit!
