Krem brokułowo-porowy

Bardzo lubię wszelkiej maści zupy. Te tradycyjne - pomidorową, ogórkową, kapuśniak, jak i te tworzone na zasadzie "Zobaczmy co się po lodówce plącze...". Dodatkowo zachwyca mnie to, że wystarczy zmiksować ugotowane składniki, aby otrzymać coś zupełnie innego, niż "stan wejściowy". Pomysłodawcą tego akurat przepisu była moja Mama. Podbił on serca i żołądki moje i grupy moich znajomych, kiedy Mama zaserwowała nam po kilku godzinach pracy na dworze gorący, gęsty, zawrotnie pachnący czosnkiem zielonkawy krem posypany dodatkowo prażonymi ziarnami. Coś wspaniałego :) Jakiś czas później postarałam się go odtworzyć i oto efekty. Smacznego!


Składniki:
  • 1 brokuł
  • zielona część pora
  • 2 średnie marchewki (lub 3 malutkie)
  • 1 pietruszka
  • 1 cebula
  • 3 średnie ziemniaki
  • 4 ząbki czosnku
  • 3 liście laurowe
  • 6-8 ziaren ziela angielskiego
  • 1 łyżeczka majeranku
  • 1 płaska łyżeczka cząbru
  • 1/2 łyżeczki gałki muszkatołowej
  • szczypta chilli
  • szczypta cynamonu
  • sól do smaku

Sposób wykonania:
  1. Wszystkie warzywa umyć. Marchewki, pietruszkę, ziemniaki i cebulę obrać i pokroić w średnią kostkę (nie musi być piękna - i tak wszystko potem zmiksujemy).
  2. Brokuła podzielić na różyczki, pora pokroić na niewielkie kawałki.
  3. Pokrojone warzywa wrzucić do garnka i zalać wodą tak, aby było ledwo przykryte. Brokuła ułożyć na wierzchu - nie musi być pod wodą. Dodajemy ziele angielskie i liście laurowe i gotujemy aż warzywa będą miękkie. Pod koniec gotowania dodajemy czosnek i pozostałe przyprawy.

  4. Ugotowane warzywa odstawiamy do ostygnięcia. Odławiamy liście laurowe i ziele angielskie. Całość miksujemy na gładki krem. Jeżeli bardzo nam się spieszy, można oczywiście miksować "na gorąco", ale wtedy trzeba zachować ostrożność, bo gorący krem lubi pryskać na boki.

  5. I to by było na tyle :) Przed podaniem krem podgrzewamy jeżeli jest taka potrzeba (uwaga - bardzo bulgocze i pryska, nawet jeżeli nie jest jeszcze gorący! I trzeba go pilnować, bo lubi się przypalać). Podajemy z grzankami lub prażonymi ziarnami. Smacznego!

Cream of broccoli and leek

I like all kinds of soup. These traditional - tomato soup, cucumber soup, cabbage soup, as well as those created on the principle of "let's see what's in the fridge...". In addition, it impresses me that it's enough to mix cooked ingredients to get something completely different than the "input state". The originator of this recipe was just my mom. It conquered the hearts and stomachs of me and group of my friends, when Mom served us, after few hours of work at the court, hot, dense, dizzyingly fragrant garlic greenish cream sprinkled with toasted grains additionally. Something wonderful :) Some time later, I got to play it, and here's effects. Enjoy it!

Ingredients:
  • 1 broccoli
  • green part of the leek
  • 2 medium carrots (or 3 tiny)
  • 1 parsley
  • 1 onion
  • 3 medium potatoes
  • 4 cloves of garlic
  • 3 bay leaves
  • 6-8 grains allspice
  • 1 teaspoon of marjoram
  • 1 teaspoon of savory
  • 1/2 teaspoon of nutmeg
  • pinch of chilli
  • pinch of cinnamon
  • salt to taste
 How to make:
  1. Wash all vegetables. Peel carrots, parsley, potatoes and onion and cut them into medium cubes (it doesn't have to be beautiful - we will then blend it all).
  2. Share broccoli into florets, cut leek into small pieces. 
  3. Chopped vegetables throw into the pot and add water so that it barely covered. Put broccoli on top - it doesn't have to be under water. Add the allspice and bay leaves and cook until the vegetables are soft. At the end of cooking, add garlic and other spices. 
  4. Leave cooked vegetables to cool. Pull out the bay leaves and allspice. Then mix everything to a smooth cream. If you are really in a hurry, you can of course mix hot soup, but then you have to be careful, because the hot cream likes to spray on the sides. 
  5. And that's it :) Before serving heat up cream if desired (note - it usually very gurgles and sputters, even if it is not yet hot! And you have to watch it because it likes to scorch). Serve with croutons or toasted grains. Enjoy it!
